Loaded Quesadillas

Grilled tortillas loaded with fresh vegetables, cheese and cooked shrimp, chicken and steak--serve with salsa, sour cream and guacamole.
 

Ingredients

  • 4 tablespoons oil
  • 1/4 cup chopped onions
  • 1 small garlic clove, minced
  • 1/4 cup chopped bell peppers
  • 1/2 cup sliced mushrooms
  • 3 plum tomatoes, chopped
  • 8 large flour tortillas
  • 4 cups shredded mild cheddar or Colby and Monterey Jack cheese
  • 1 1/2 cups cooked chicken
  • 1 1/2 cups cooked shrimp
  • 1 1/2 cups cooked steak
  • Salsa, to taste
  • Sour cream, to taste
  • Guacamole, to taste
  • Pico de gallo, to taste

Method

In a medium heavy skillet, saute onions, garlic, mushrooms and peppers in 2 tablespoons oil unitl soft. Add tomatoes and simmer a few minutes. They do not have to be cooked. Add chicken, beef, and shrimp then stir to combine and keep warm. Brush a thin layer of oil in another skillet, large enough to hold tortillas, and heat to medium. Place a tortilla in pan and sprinkle surface with 1/4 cup cheese. Add about a quarter of meat mixture and top with another 1/4 cup cheese. Cover with another tortilla and cook 3-4 minutes, or until golden brown. Place a plate over quesadilla and flip over onto plate and slide back into skillet to cook an additional 2-3 minutes, until cheese has melted. Remove from heat and cut into wedges. Serve or keep warm while cooking more quesadillas. Don't wait too long or they will become soggy. Serve with salsa, sour cream, pico de gallo and guacamole.

 

Notes: This is a great recipe to use up leftover meats. One quesadilla would serve two normal appetites.
