Kim's Famous Quesadillas


Chicken, shrimp, pineapple and green pepper are just a few of the ingredients in these famous quesadillas. Try them tonight.



Ingredients:

  • 1 pound of raw chicken breasts - cut into chunks
  • 1/2 pound of raw shrimp shelled and deveined
  • 1 cup of canned pineapple chunks drained
  • 1 small Vidalia onion chopped
  • 1 small green pepper chopped
  • 1 large tomato chopped
  • Olive oil
  • 1 tsp of minced garlic
  • 1 tsp of lemon pepper seasoning
  • 1 tsp Old Bay seasoning or Cajun seasoning
  • 2 16oz bags shredded Mexican cheese
  • 1 package of taco seasoning
  • 2 packages of tortillas - burrito size
  • Sour cream
  • Salsa
  • 2 skillets- one large and one small

Method

Place the two tablespoons of olive oil in the large skillet over medium heat. Add the garlic, onion, and green pepper and stir fry for one minute. Then, sprinkle the chicken breast with the lemon pepper seasoning, add to the skillet, and stir fry for approximately 5 minutes or until no longer pink. Sprinkle the shrimp with the Old Bay seasoning and push the chicken mixture over to one side of the skillet. Add the shrimp cooking approximately one to two minutes or until pink. Stir the entire mixture. Add the package of taco seasoning mixing until well coated. Turn the burner off and add the tomato and pineapple to mixture and stir well. In the other skillet, heat one teaspoon of olive oil and add one tortilla. While heating, sprinkle 1/4 cup of cheese (more if desired) over the entire surface of tortilla. Moving quickly, add one serving spoon of the meat mixture (approximately 1/2 cup) to one side of the tortilla only. Then, fold the tortilla and flip once. Grill the tortilla until golden brown and remove. Cut into fourths and serve with sour cream and/or salsa if desired.

Notes: Use one teaspoon of olive oil for each grilled quesadilla.

Number of servings: 10-15 depending on the amount of meat mixture used
