Hottoddy's Breakfast Burrito

These fast and easy breakfast burritos are a tasty way to start the day--and great when you need breakfast to go.
 

Ingredients

  • 6 large eggs
  • 3 Tablespoons salsa
  • 1/4 cup milk
  • 5-6 floured tortillas
  • 6-7 microwavable sausage links
  • 5 slices of American cheese
  • Salt and pepper
  • Butter
 
Method

Microwave breakfast sausage until completely done. When cooled chop up finely and set aside. Butter one side of each of the tortillas and microwave 30-45 seconds, set aside. In a medium bowl combine the eggs, milk, salsa, salt and pepper to taste. Beat eggs 30-60 seconds then add chopped sausage. Tear up the cheese in small pieces, add to the eggs, and mix everything in the bowl thoroughly. Scramble the eggs in a skillet until done. Heat up a griddle (preferred) or pan with butter. Take a tortilla and fill with egg mixture. Wrap tortilla like a burrito making sure both ends are closed. Fry both sides until golden brown. Wrap each one individually in foil.

 

Notes: Be careful not to overfill the tortilla with too many eggs or both ends will not fold to close. When the burritos are wrapped in foil it helps seal the ends better and keeps warm for almost 2 hours.
