Game Day Kickin' Quesadillas

Quesadillas take on a delicious, smoky flavor when grilled--serve with a cool yogurt sauce to tame the spicy chili.
 

Ingredients

  • 2 cups shredded medium or sharp cheddar cheese
  • 8 10 inch flour tortillas
  • 1 large chipotle pepper in adobe sauce, finely minced
  • 1 15 oz can chili, with or without beans
  • 1 1/2 cups plain yogurt
  • 1 1/2 tbsp dry ranch dip mix
  • Green onions, chopped
  • Cilantro, chopped
 
Method

Mix yogurt and ranch dip well. Chill for at least 30 minutes. Mix chipotle pepper with chili. Spread chili evenly on 1/2 of each tortilla. Top with shredded cheese. Fold over uncovered half of tortilla. Place on preheated grill over medium heat until tortilla starts to brown and crisp. Turn over and repeat on other side. Cut quesadillas into wedges, serve with yogurt mixture, and top with cilantro and green onions.
