Fiesta Rice

Long grain rice, salsa, sausage and peas, topped with lots of melted cheese--a great south of the border side dish.
Ingredients
- 4 cups prepared long grain white rice
- 1 lb bulk hot sausage, browned and drained
- 1 cup hot salsa
- 1 cup frozen green peas
- 2 cups grated Monterey Jack cheese

Method
Prepare rice as directed on package and set aside. Brown sausage in large skillet and drain well. Put back in skillet, add salsa and peas, stir over medium heat until well blended. Gently fold in rice. Pour in a serving dish and sprinkle with cheese. Serve warm.
Notes: You can change the "hotness" by using mild sausage and mild salsa. I serve with tortilla chips and sides of sour cream, guacamole and salsa.
