Fiesta Chorizo Pizza

A spicy Mexican pizza with chorizo sausage, enchillada sauce and lots cheese. A great appetizer or main dish.
 

Ingredients

  • Pre-made thin pizza crust
  • 1/2 cup of red enchilada sauce
  • 3 links of chorizo sausage about 8 ounces)
  • 8 ounces of monterey jack cheese (with or without jalapenos) depending on your taste
  • 1/4 cup finely chopped red onions
  • 1/4 cup finely chopped green peppers
  • 3/4 cup of bottled Mexican cheese dip with jalapenos

Method

Preheat over to 450 degrees. Crumble and pan fry chorizo sausage according to package. Cool the sausage. Spread the enchilada sauce over the pizza, than add cooled sausage. Layer remaining ingredients in the follow order: red onions, green peppers, mexican dipping cheese (heat and drizzle over entire pizza), and shredded monterey jack cheese. Reduce oven temperature to 425 degrees and bake pizza directly on oven rack for 10 minutes. Cool pizza a few minutes before slicing.
