Extremely Easy Enchiladas

These enchiladas are a snap to prepare no matter what the schedule. They are great for dinner or as a starter.
 

Ingredients

  • 8 flour tortillas
  • 4 cups cubed chicken or cooked chicken 2 cups shredded cheese
  • 8 oz cream cheese
  • 1/2 cup butter
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 can evaporated milk
  • 1 can sliced olives

Method

Mix 1 cup cheese, cream cheese, butter, cream of chicken soup, sour cream, 1/2 of evaporated milk, and chicken in a sauce pan until melted. Warm tortillas in microwave for a few seconds. Grease a 9 x 13 glass pan. Put 1/2 of mixture in each tortilla and roll and place tightly side by side in pan. Spread rest of mixture and the rest of the evaporated milk over all enchiladas. Sprinkle some cheese over top. Bake in a 350 degree oven for about 20 minutes. Garnish with olives, chopped onions, lettuce and chopped tomatoes as desired.

 

Notes: You can substitute for non or low fat cheeses, cream cheese, sour cream, etc. You can also opt for a different meat selection than chicken and also use whole wheat tortillas instead.
