Enchiladas


Use either flour or corn tortillas, as you prefer. They are dipped in a red sauce made from tomato sauce, green pepper, chili powder, oregano, and cumin, and are filled with a mixture of cooked ground beef, onion, sour cream, and cheese.



Ingredients:

  • 1 pound hamburger (ground beef)  
  • 1 medium onion, chopped  
  • 1/2 cup dairy sour cream  
  • 1 cup shredded cheese  
  • 2 Tbsp. chopped parsley  
  • 1 t. salt  
  • 1/4 t. pepper  
  • 1 can (15 oz.) tomato sauce  
  • 2/3 cup water  
  • 1/3 cup chopped green pepper  
  • 1 Tbsp. chili powder
  • 1/2 tsp. dried oregano leaves  
  • 1/4 tsp. ground cumin  
  • 2 green chilis (optional)  
  • 1 clove garlic, finely chopped
  • 8 flour or corn tortillas  

Method

Cook & stir hamburger in skillet over medium heat until light brown. Remove from heat; drain. Stir in onion, sour cream, cheese, parsley, salt & pepper. Cover and set aside. In saucepan heat remaining ingredients (except tortillas) to boiling, stirring occassionally; reduce heat. Simmer, uncovered, for 5 minutes. Pour sauce into an ungreased 9-inch pie plate. Dip each tortilla into sauce to coat both sides. Spoon about 1/4 c. hamburger mixture onto each tortilla; roll tortilla around filling. Arrange in ungreased oblong baking dish. Pour remaining sauce over enchiladas. Bake, uncovered, in 350 degree oven, until bubbly, about 20 min. Garnish with additional shredded cheese, sour cream and chopped onions, if desired.

Notes: You can substitute 1 more cup of cheese for the sour cream in the filling, if desired. Tastes great that way.
