Fried corn tortillas are placed in a baking dish and topped with shredded cooked chicken, cheeses, and a slightly thickened sauce made with chicken broth, onion, green onion, garlic, tomatoes, green chilies, and milk.
 

Ingredients

  • 2 tbsp. butter
  • 2/3 cup chopped onion
  • 2 tbsp. flour
  • 1 1/2 cups chicken broth
  • 1 clove garlic, minced
  • 3/4 tsp salt
  • 12 corn tortillas
  • Cannola frying oil
  • 1 cup shredded monterrey cheese
  • 1 cup shredded mild cheddar cheese
  • 2 cups shredded cooked chicken breast
  • 1/4 chopped green onion
  • 2 red tomatoes
  • 1 can green (rajas) chiles, drained
  • 1/2 cup milk
  • 1 cup sour cream

Method

Melt butter in saucepan, saute onion; stir in flour; add broth; cook until slightly thickened. In blender put tomatoes, chilies, and milk; blend. Add to the cooked saucepan ingredients; add green onion and garlic; heat through. Do not boil. Fry tortillas & drain grease; place tortillas in baking dish; add some of the cheese and all the shredded chicken; top with cooked mixture and more cheese. Bake, uncovered, in 350F oven for 20 min. or until heated through. Serve with sour cream.

 

Notes: A breakfast or dinner dish; serve with Refried Mexican beans.
