Easy Taco Salad


Lettuce, tortilla chips, and cooked ground beef seasoned with taco mix, are tossed with a dressing of Velveeta cheese & Rotel tomatoes.



Ingredients:

  • 2 lb ground beef
  • 16 ounces of Velveeta cheese
  • 1 pkg taco seasoning mix
  • 2 cans of Rotel tomatoes and green chilies
  • 1 head of lettuce, torn
  • 1 (15 oz) bag of tortilla chips, slightly crushed
  • 2 avocados, chopped
  • Sour Cream

Method

Brown ground beef in skillet. Meanwhile, combine Velveeta and Rotel in medium bowl and melt in microwave. This takes approximately 4-5 minutes. When beef is browned, drain off fat and stir in the package of taco seasoning. In a large bowl layer half of the bag of chips, half of the lettuce, and half of the ground beef; repeat. Pour entire bowl of Velveeta and Rotel over the top of the salad. Toss and serve. Top each serving with a spoonful of sour cream and some avocado.
