Easy Cran-Apple Empanadas

Refrigerated pizza dough is rolled into individual rounds and topped with a mixture of apple pie filling, dried cranberries, cheddar cheese and apple pie spice. The dough is folded over, sealed, brushed with butter and baked.
Ingredients
- 1 16-oz refrigerated pizza dough
- 1 21-oz can apple pie filling, chopped fine
- 1/4 cup dried cranberries
- 1 teaspoon apple pie spice
- 1/4 cup finely shredded sharp cheddar cheese
- 2 tablespoons melted butter

Preheat oven to 400 degrees. Lightly grease a large baking pan. Set aside. Separate dough into 6 pieces. Roll out on lightly floured surface into 8-inch rounds. In medium bowl, gently stir together pie filling, cranberries, spice and cheese. Evenly mound filling on dough rounds. Moistened edges with water. Fold over forming semi-circles, crimping edges to seal. Place on prepared pan. Brush with butter. Bake 12-15 minutes.
Notes: These sweet empanadas make great desserts to add to a Mexican buffet or bake sale. Can be drizzled with powdered sugar glaze, if desired.
