Deep-Dish Enchurito Bake

Refried black beans are topped with ground beef, onion, chorizo, cheese, & salsa, then baked, spread with guacamole & sour cream and served with chips.
Ingredients
- 2 (16 oz) cans refried (black) beans
- 1 lb ground sirloin beef
- 1/3 lb chorizo sausage, casings removed and broken up
- 1 onion, chopped
- 1 pkg taco seasoning mix
- 1 cup grated Monterey Jack cheese
- 1 (11 oz) jar Salsa
- 1 (6.5 oz) can sliced ripe (jalapeno) olives
- 2 cups prepared guacamole
- 1 cup sour cream
- 1 bunch green onions, chopped
- 1/2 cup chopped fresh cilantro
- 2 (2.25 oz) cans sliced olives
- Tortilla chips

Spray an 8x12 inch baking dish with non-stick cooking spray. Preheat oven to 350 degrees. Evenly spread refried black beans over bottom of dish. Place ground sirloin, chorizo, onion and taco seasoning in skillet and cook and stir until browned. Drain off any excess grease, blot dry with paper towels, spread evenly over black beans. Next spread cheese, salsa, and black olives over the top. Place dish in oven to bake for 20 minutes. Remove from oven and spread with guacamole. Combine sour cream, green onions and cilantro together in small bowl. Spread over guacamole; scatter jalapeno olives evenly over the top and serve with plenty of tortilla chips for dipping and scooping.
Notes: This is a great party or buffet dish. It is pretty, tasty, and fun to eat, too. Perfect for a Mexican buffet or brunch.
