Cream of Chicken Enchiladas

The recipe title says it all. This Mexican traditional meal is creamy and full of chicken and cheese.
 

Ingredients

  • 2 cans cream of chicken soup
  • 2 cans chicken -white meat or mixed
  • 1-2 cans diced green chilies, 4 oz.
  • 1 container sour cream, 8 oz
  • 2 cups grated cheese, cheddar sharp Monterrey jack- chef's choice
  • 1 dozen corn tortillas

Method

Warm tortillas in microwave, in slow oven 200 degrees or in skillet with oil heated. Mix together soup, chicken meat, half of the sour cream, green chilies and 1 cup of cheese. Place 2 heaping tablespoons of filling into center of each tortilla, roll and place in baking dish. When done, add 1/4 cup of water to leftover filling and pour over enchiladas. Bake at 325 for 20 minutes. Place leftover 1 cup of cheese on top and bake additional 10 minutes or until cheese melts.

 

Notes: Serve with leftover sour cream and additional green chilies if you like things spicier. With pinto beans and rice, along with a nice guacamole on lettuce, this makes a great filling meal.
