Crab Quesadilla

Try crab in your quesadilla tonight instead of chicken. These quesadillas have some heat with the jalapenos and pepper Jack cheese.
 

Ingredients

  • 1 can crab meat
  • 4 large tortillas
  • 1 jalapeno pepper, seeded
  • Herb and garlic cheese spread or cream cheese
  • 1/2 cup shredded pepper Jack cheese
  • 1/2 cup sliced roasted peppers
  • 1/2 cup fresh chopped cilantro
  • 1 jar salsa

Method

Spread two tortillas with a thin layer of cheese spread, or cream cheese. Arrange 1/2 can crab meat on each; add grated cheese, jalapeno slices, roasted peppers and cilantro. Place second tortilla on top and seal the edges. Spray a nonstick pan with cooking spray and brown using medium high heat. Flip and repeat on other side. Repeat with each tortilla. Cut with a pizza wheel into eight wedges. Serve with your favorite dipping salsa.
