Chimichanga

Cream cheese makes a great addition to these Mexican specialties.
Ingredients
- 3-4 skinless, boneless chicken breast
- 2 cups salsa, reserve one cup for topping
- 1 pkg. cream cheese
- 1 cup of shredded cheddar cheese
- 1 cup of sour cream
- 8-12 flour tortillas

Method
Fry chicken breast in 1 tablespoon olive oil. Cook until brown and no long pink inside. Remove from pan, shred chicken with a fork. Put in large bowl and set aside. Mix cream cheese and salsa in another bowl. Once mixed, add chicken. Put in tortillas and roll. Put in 9x13 baking dish. Add remaining salsa on top and cheddar cheese. Bake at 350 until cheese is melted. Serve with sour cream on side.
