Chile Relleno Bake
A mixture of eggs, milk and a little flour is baked with whole green chilies, shredded cheese and salsa.
Ingredients
- 1 cup milk
- 1/3 cup flour
- 2 eggs, beaten
- 1 7-oz can whole chilies, cleaned & diced.
- 2 cups grated cheese (such as cheddar or Jack)
- 8 oz. jar salsa

Method
Preheat over to 375 degrees. Grease a 1 ? quart baking dish. Mix milk, flour and eggs. Pour half of the mixture into baking dish. Place half of the chilies on top of the mixture. Place half of the cheese on top of the chills. Repeat this order. Pour salsa over the top. Bake at 375 degrees for about one hour.
Notes: This is a wonderful breakfast/brunch dish. It can be turned into a meal by adding cubed chicken. Left-overs (if there are any) are easily re-heated in the microwave.
