This Mexican breakfast dish heats crushed tortilla chips with salsa, and pours beaten egg over all. The mixture is cooked until the eggs are done, then sprinkled with shredded cheddar or Jack cheese.
Ingredients
- 1 tablespoon oil
- 1 cup salsa (red, green or mixed)
- 2 cups crushed Tortilla Chips
- 6 eggs
- 1 cup grated Cheddar or Monterey Jack cheese

Method
Heat oil in a heavy frying pan. Add salsa and cook for 1 minute on medium heat. Add chips and cook until most of the moisture has been absorbed. Beat eggs and pour over chip mixture. Cook until eggs are not runny. Turn off heat and sprinkle on cheese. Serve hot when cheese has melted.
Notes: A Mexican breakfast specialty. Good with leftover salsa and chips from a previous Mexican food meal.
