Chicken Stuffed Wraps

Whole wheat tortillas are filled with a chicken mixture, refried beans & cheese. They're rolled up, topped with a blended sauce of tomato & salsa, and baked.
 

Ingredients

  • 2 boneless, skinless chicken breast halves
  • Extra virgin olive oil
  • (Salt-free) Cajun seasoning
  • Freshly ground black pepper
  • 1 (15-oz.) jar salsa
  • 1 (8-oz.) can (no-salt) tomato sauce
  • 1 Tbsp. fresh lime juice
  • 4 cloves garlic, cut in half
  • 4 scallions or green onion, sliced, including some of the tops
  • 1/4 c. chopped cilantro or parsley
  • 1/2 tsp. garlic powder, or to taste
  • 1/2 tsp. onion powder, or to taste
  • 1/8 tsp. freshly ground black pepper
  • 1 Tbsp. canned chopped chili peppers, rinsed & well drained, or to taste
  • 1 (8-oz.) pkg. (Sargento reduced-fat) shredded 4-cheese Mexican blend cheese, divided
  • 1 (15-oz.) can (fat-free) refried beans, warmed in microwave oven or saucepan
  • 6 whole wheat tortillas or wraps

Method

Preheat oven to 350 degrees. Spray a small baking pan with Pam. Rub each chicken breast half lightly with olive oil; season with Cajun seasoning and black pepper. Place in pan. Bake for 25 minutes, or until no pink remains; cool slightly and cut into 1/2-inch cubes. Blend salsa, tomato sauce, lime juice, garlic, scallions, cilantro, garlic and onion powders, black pepper and chili peppers in a food processor or blender until smooth. In a small saucepan, heat about 2/3rds of this mixture to a simmer. Mix the remaining sauce with the chicken cubes and 3/4 cup of the cheese. Spray a very large rectangular baking dish or pan with Pam. Spread 3/4 cup sauce on the bottom. Evenly spread the warmed refried beans on each tortilla. Evenly spoon the chicken mixture on top of the beans; roll up each tortilla tightly. Place the tortillas seam side down in the pan. Top with the remaining sauce and cheese. Bake for 25 to 30 minutes or until sauce is hot and the cheese has melted.
