Chicken Quesadilla Burgers

Citrus marinated chicken blends perfectly with the fresh pico de gallo, cilantro and spicy ranch dressing in these quesadillas.
 

Ingredients

  • 2-4 boneless skinless chicken breasts
  • 1 bottle citrus marinade
  • 1/4 cup olive oil
  • 2 tbsp water
  • 1 container fresh pico de gallo
  • 1-2 cups shredded colby jack cheese
  • 4-6 whole wheat tortillas
  • 1/2 cup spicy ranch dressing
  • 1/2-1 cup fresh cilantro, chopped
 
Method

After cutting chicken breasts to proper size, place in a medium bowl with olive oil and marinade. Cover and refrigerate at least 30 minutes, turning once. Take chicken out of marinade and saute over medium heat, until no longer pink. Spray a large skillet with nonstick cooking spray and preheat pan over medium heat. Start assembling quesadillas by using one tortilla and spreading about 1/4 cup cheese on half of tortilla. Add about 2 tablespoons of spicy ranch dressing over cheese. Place cooked chicken breast over dressing and top with more cheese. Fold tortilla in half and place in warm skillet. Using a heavy pan or plate placed on top of quesadilla to keep it flat and to help it lay down better. Brown tortilla on both sides flipping once. Watch closely, as they will start to brown quickly. Remove quesadilla burger from pan, open, and sprinkle in fresh cilantro and pico de gallo.
