Chicken and Sweet Potato Enchiladas

Mashed sweet potatoes add a hint of sweetness to traditional enchiladas.
Ingredients
- Tortillas
- Sweet potato
- Roasted chicken, shredded
- Jarred sliced jalapenos, diced
- Salsa
- Shredded cheddar or Mexican cheese
- Enchilada sauce

Method
Peel and cube sweet potato then steam until soft. Mash and spread sweet potato onto tortilla. Add chicken, then place about 2 tbsp salsa on top of chicken. Place about 1/4 cup shredded cheddar cheese on top of salsa. Spread a little jalapeno on top of cheese and roll up tortilla. Place in 13 X 9 baking dish. Repeat with more tortillas until baking dish is full. Pour enchilada sauce onto top of wraps to completely cover. Sprinkle 1/2 cup of shredded cheddar on top. Bake in a 375 degree oven for 15-20 minutes. Serve with sliced green chiles and fage or sour cream.
