Cha-Cha Chorizo Casserole

This recipe combines eggs with chorizo sausage, sour cream, whipping cream, black beans, corn, bell pepper, green chilies, green onion, chipotle pepper, cilantro and cumin in a baking dish. Smoked cheddar cheese is sprinkled on top, and it's served with green chili salsa.
 

Ingredients

  • 8 oz. chorizo sausage, cut in small cubes
  • 8 eggs
  • 1 cup sour cream
  • 1 cup heavy whipping cream
  • 2, 4-oz cans diced green chiles, drained
  • 2 green onions, sliced
  • 1 tablespoon chipotle pepper in adobo sauce, minced
  • 1/4 cup cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 cup fresh or frozen whole kernel corn
  • 1 3/4 cup cooked black beans (about 1 can)
  • 1/4 cup diced red bell pepper
  • 1 1/2 cup finely shredded smoked cheddar cheese
  • 1 cup green chili salsa

Method

Preheat oven to 350 degrees. Lightly grease a 13x9x2-inch baking pan. Set aside. Brown chorizo in medium skillet over medium heat until cooked through, about 5-7 minutes. In large bowl, beat eggs with sour cream and heavy cream until fluffy. Stir in cooked chorizo, green chilies, green onion, cilantro, chipotle, cumin, salt, corn, beans, and bell pepper. Pour into prepared pan. Bake 30-35 minutes, or until center is set. Add cheese. Bake an additional 5 minutes. Serve with green chili salsa and additional sour cream and cilantro, if desired.

 

Notes: This easy scrumptious casserole is perfect anytime of the day...and would be a perfect addition to a Mexican buffet.
