Black Bean Quesadillas

Savory quesadillas filled with black beans, tomatoes, and shredded cheese--top with sour cream and avocado.
 

Ingredients

  • 1 10 ounce can diced tomatoes with green chilies, drained well
  • 1 10 3/4 ounce black beans, drained
  • 1 tablespoon extra virgin olive oil
  • 1 cup chopped onions
  • 3 garlic cloves, chopped
  • 1 tablespoon fresh cilantro
  • 2 cups Mexican blend shredded cheese
  • 1 lime, halved
  • Zest of 1 lime
  • 1/2 cup mayonnaise
  • Salt and pepper to taste
  • 8 6 inch flour tortillas
  • 1 cup sour cream
  • 1 avocado, peeled and chopped
 
Method

In a medium skillet, heat olive oil over medium heat. Saute onions and garlic for 3-4 minutes. Remove from heat and add to medium bowl along with diced tomatoes, juice from 1/2 of lime and zest. Salt and pepper to taste. Take 4 tortillas and spread with mayonnaise and set aside. Take other 4 tortillas and spread with tomato mixture, then sprinkle black beans and on top. Cover each bean covered tortilla with a mayonnaise covered tortilla. In a large nonstick skillet over medium heat, heat each quesadilla on each side until cheese melts, about 2-3 minutes. Meanwhile squeeze remaining lime on avocado, tossing to coat. Cut each quesadilla into 4-6 wedges and serve with avocado and sour cream.
