Barbara's Sour Cream Chicken Enchiladas

Cream of chicken soup and sour cream make a rich sauce for these cheesy, chicken enchiladas.
Ingredients
- 12 tortillas
- 1 can cream of chicken soup
- 1 1/2 cups diced cooked chicken
- 6 oz shredded cheese
- 1 chopped onion
- 2 tablespoons chopped jalapeno peppers
- 1 8 oz carton sour cream
- Milk

Method
Mix all ingredients except tortillas, milk and cheese together. Put tortillas in warm oil (or microwave briefly) to soften. Place about 3 tablespoons of mixture on each tortilla. Roll and place folded side down in casserole. Put enough milk in remaining mixture to thin slightly. Pour over enchiladas and sprinkle with cheese. Bake at 325 degrees until bubbly.
Notes: Great for freezing.
