Crumbled ground beef, bacon, green onion and liquid smoke are cooked together, spooned into taco shells, and drizzled with a catsup mixture.
In a medium saucepan, cook diced bacon until lightly crisp. Pour off all but a half tablespoon of the grease. Add ground beef and scallions and cook together until no trace of pink remains in the beef.
Pour off any grease. Stir in Liquid Smoke, chili powder, salt and pepper; cook together another 10 minutes. Combine the sauce ingredients (catsup, mustard and chili powder) in a small bowl.
Assemble tacos: Fill taco shells with ground beef mixture, then a drizzle of sauce, then shredded sharp Cheddar cheese. Heat in a low-temp oven or microwave just until cheese is melted, then add lettuce, tomato and onion.
