This "Mexican Rice" main dish also features beef or chicken and vegetables that are cooked with the rice in a tomato sauce mixture that's seasoned with cumin.

  • Servings: 2 or 3

Ingredients:

Beef or Chicken Breast, uncooked
Oil
1 cup White Rice
1 can (la Pato) Tomato Sauce
Desired Vegetables
Cumin, to taste

Directions:

Slice chicken or beef into small strips. Place 1-2 teaspoons oil in a frying pan. Place chicken or beef in pan and cook. Add white rice to pan and cook until lightly browned. Mix tomato sauce with enough water to measure 2 cups. Add to rice along with desired veggies and cumin. Bring to boiling on high heat, then simmer about 15-20 minutes, until rice is done.
