Pozole is a Mexican soup which is a staple all over the southwest and Mexico. This recipe provides all the authentic flavor without all the work. It is wonderfully flavorful and since it uses the slow cooker...oh so easy!

  • Cook Time: 4 hours
  • Total Time: 4.5 hours


3 lb Dark Meat Chicken, skin and bones removed
4 cups Water
1× 14.5 oz can Diced Tomatoes
1× 15.5 oz can Hominy
1 bunch Green Onions
1 Anaheim Pepper
1 can Chile Verde or Green Enchilada Sauce
Fresh Cilantro To Garnish
Onion To Garnish
Sliced Lime To Garnish


Add water and diced chicken to a large stock pot and simmer for 15-20 minutes to make chicken broth.

Transfer chicken and broth to crock pot, then add chopped green onion, chopped pepper, tomatoes and chili verde or green enchilada sauce. Cook on low heat for two hours. Add hominy and continue cooking for two hours. Serve hot with garnishes.
